    Wooohooo! I am very glad to say that I just finished another embroidered rose for my friends 14th century hood project! Recently I was quite busy with other projects – like sewing a hood for our beautiful Queen Oda and painting a shield for my husband for the Meridian Crown Tournament – but whenever I found some idle time inbetween, I continued working on the roses for my friends 14th century hood. And it finally paid off – though it seemed to take forever, the 5th rose  is finally finished too!

I promised a friend who does awesome meals in the I promised a friend who does awesome meals in the instapot to also show more of my cooking to repay her kindness. 

Today I take you through my process of making one of my favs - Rindsrouladen (beef-rouladen). Sorry for not taking more pics but it can get quite messy with the mustard.

So, I got me a lovely piece of beef that was labeled for stew and showed a nice big coherent piece. It was actually one of the cheapest cuts at the meet counter and I normally cut away all the excess and fat and put it through the meet grinder for medium rare burgers or meet balls. From this piece I cut as many rather thin slices as possible and put the rest through the meet grinder. Btw. if you don't have a meet grinder, you can also cut the rest of the beef into thin slices and make a nice beef stir fry.

So, now to the Rouladen - I put some mustard on the beef slice, pepper it, put some pickle slices on it, when I am in the mood I also add carrot sticks in the middle but not today. Then I roll them up and as I always forget to get toothpicks, I use some cord to bind them so the layers stay in place. I put my instapot on saute/high, add some fat and when it is hot, I brown the Rouladen on all sides. If you get some liquid while you are browning it, you can carefully remove the inner pot and pour it into a bowl for later use and continue browning.

When the browning is done, I remove the Rouladen and add carrots and onions and brown them. When they have a nice shine I add about 2 cups of liquid (in this case the meet juice from my last piece of beef I cut in the instapot and saved in a reused Barilla jar - no extra seasoning as this "juice" has plenty in it). If I have some unused pickle slices left, I normally chop them up and add them to the pot. Then I add my OXO silicon ring and arrange the Rouladen on it. I put my instapot on 25 min/pressure cook/normal or low setting (Natural release).

To serve I take out the Rouladen, remove the silicon ring and get to the natural sauce with carrots and onion. I normally start my rice as soon as I start the pressure cooking.

Now I feel better in so many ways - that's quite some weight off my head, will make life so much easier and help a kid with cancer to feel better thanks to my fabulous neighbor @hellomolly___ ! ❤️
